(Shh! It’s a Red Lobster secret recipe.) Cheddar Bay Biscuits

 

I’ll be honest right up front and say that this was brunch, not dinner.  So, it shouldn’t be in this blog.  But, come on. How many times did you do something you weren’t supposed to do in the last week? Aha. I thought you would understand. Anyway, the biscuits were so good, I’ll want to find this recipe again for a dinner, so I needed to post it.

This is supposedly a “top secret” recipe for the biscuits you get at the Red Lobster restaurant. I used to meet friends there for lunch on occasion, and I remember how we would chow down on these yummy warm biscuits and ruin our appetite for our main course.  They were just so good we couldn’t stop ourselves.

Top Secret Red Lobster Cheddar Bay Biscuits
(Makes 1 dozen biscuits. I made only half the recipe and got 9 biscuits with that amount of dough.)

  • 2  1/2 cups Bisquick baking mix
  • 4 Tbl (1/2 stick) cold butter
  • 1 heaping cup grated cheddar cheese
  • 3/4 cup whole milk
  • 1/4 tsp garlic powder

TOPPING

  • 2 TBL butter
  • 1/2 tsp garlic powder
  • 1/4 tsp. dried parsley flakes (I used fresh because I had them)
  • pinch salt

Preheat oven to 400 degrees. Combine Bisquick with cold butter in a medium bowl, mixing with a pastry cutter or fork until remaining chunks of butter are the size of peas.  Add cheddar cheese, milk and 1/4 tsp garlic powder.  Mix by hand until combined, but don’t over mix.

Drop heaping tablespoons of dough onto an ungreased cookie sheet. Bake for 15 to 17 minutes, or until tops begin to turn light brown.

When you take the biscuits out of the oven, melt 2 TBL butter in a small bowl in your microwave. Stir in 1/2 tsp garlic powder and the dried (or finely minced fresh) parsley flakes. Use a brush to spread garlic butter over the tops of all the biscuits.
