Hubcap Scallops

First appearance of the Del Mar Fair magic hubcap cooking method in the blog! Wanted to make it French – “a la enjoliveur” but Ev said “hubcap” is weird enough. Maybe she will explain that unique cooking device sometime as she is the touch typist!

Ev: The hubcap is an Asian cooking utensil.  There is a ring that  you put liquid in and then a cover that looks like a hubcap!  You “broil” the food on the hubcap surface.  The food is amazingly good when cooked this way.  I rolled the scallops and zucchini in olive oil first, and sprinkled it with Mrs. Dash’s garlic and herb seasoning.  Couscous is always the best accompaniment to this light hubcap delight.
